Eggless dry fruits cake
Add the egg replacer, condensed milk and vanilla to the beaten butter and sugar mixture and beat again till smooth. Add this to the mixed flour and mix well.
Add the soda water and mix well. Preheat the oven to 180 degree C.
Lastly add the dry fuits and mix well; sprinkle some dry fruits and chocolate crumbs on top of the batter. Grease a baking tray with butter/oil and pour the mix in to the tray.
Bake for 35 minutes or until the cake is done - check by inserting a knife, if it comes out clean then your cake is done! Once done, cool on a wire rack, slice and enjoy! Spread coconut onto another large plate. Slide pieces of fruit onto the skewer and design your own kabob by putting as much or as little of whatever fruit you want! Do this until the stick is almost covered from end to end.

I also added Agave and about 1/4 cup of soy milk since i did not have enough condensed milk. Sieve baking powder, baking soda, cocoa powder and all purpose flour.
Add all purpose flour mixture to the condensed milk mixture. Add vanilla essence and mix well.
Pour in a greased pan and bake for about half hour. Cool the cake and then cut it horizontally.
Mix/beat cream and sugar well to get peak consistency (like butter). Place one layer of cake and spread the cream.
Place the second layer (you can also keep cut fruits like cherry or pineapple on the cream.) Now cover the cake with rest of the cream mixture and decorate with cherry or tutti fruity or chocolate shavings.
Note: We can also use ice cream instead of the cream to make an ice cream cake. Mix in the sugar. Mix the custard power in half a cup of lukewarm milk and mix it to the condensed milk.
Stir continuously so that no lumps are formed and the custard does not stick at the bottom. Cook till the custard thickens.
Cool to room temperature. Coat the chopped fruits in the sugar syrup and then coat with sesame seeds.
To serve: Place a portion of the prepared custard sauce in individual bowls. Top with a portion of the sesame coated fruits and decorate with mint leaves.

This is then chilled in refrigerator. Choice of fruits is chopped up and mixed with custard along with chopped nuts and dried fruits.
Serve fruits custard immediately or chill until required. Makes: around 3 Fruit Custard.
Ingredients: Milk 2 Cups 1 1/2 – 2 tbsps Apple 1 Mango 1 Small Banana 1 Small Dates 4 Almonds 8 Honey to taste leaf for garnish Method of preparation: Microwave almonds in half a cup of water for a minute. Squeeze the almonds to remove the skin.
Finely chop the dates. Wash and chop the apple into small pieces.
Peel and chop the mango into big chunks discarding the pit. Peel and chop the banana into small chunks.
Mix all the chopped ingredients together. Dissolve the corn flour in quarter cup of the room temperature milk and keep aside.
Heat remaining milk in a sauce pot and bring it to boil. Keeping stirring while pouring the corn flour dissolved milk.
Let the milk boil for couple of minutes for milk to thicken. Once milk is little thick, stir in desired honey and remove from heat.
Cool to room temperature and refrigerate the custard for few hours. In a serving bowl, add the chopped fruits and dried fruits and nuts.
Layer the fruits with few tablespoons of the chilled custard. Garnish with more fruits and nuts and more honey and a mint leaf.
Serve fruit custard immediately. Notes: Make sure to use fruits that hold together when added to the custard.
Suggestions: Adjust the amount of corn flour for consistency of the custard. Slice the almonds if desired.
Store the custard in refrigerator for good couple of days. Make sure to mix the banana just before serving.
Variations: Add seasonal fruits or your choice of fruits to the custard. Use store bought custard powder (having flavors and color) for a variation.

How to serve: Take a tall ornate glass. First put 2 heaped tbsp of raspberry jelly.
Top it with a big scoop of strawberry ice-cream, put a tsp of strawberry crush on the ice-cream. On it put some mixed fruits.
Add a big scoop of kesar pista ice-cream. Top it with 2 heaped tbsp of orange jelly.
Crown the jelly, with a big scoop of vanilla ice-cream. Pour a tbsp of chocolate sauce on the vanilla ice-cream.
