BUCKWHEAT DHOKLAS
Serves 4. Ingredients 1 cup buckwheat (kutto or kutti no daro) 2 tablespoons sanwa millet (sama) cup fresh low fat curds 1 teaspoon ginger - green chilli paste 1 teaspoon oil a pinch soda bi-carb salt to taste Other ingredients oil for greasing For the garnish 1 tablespoon chopped coriander Method 1.
Wash and drain the buckwheat. Add the curds and sanwa millet and mix well.
Allow to soak for at least 3 hours. 2.
Add the ginger-green chilli paste, oil, soda bi-carb and salt and mix well. 3.
Pour the batter into a 200 mm. (8") diameter greased thali.
4. Steam for 12 to 15 minutes till the dhoklas are firm.
5. Cool slightly and cut into diamond shaped pieces.
6. Serve hot, garnished with the coriander.

Place a shallow plate with vertical edges at least 1\"high, on the stand, after greasing it. Mix rawa,salt and curds in a bowl.
Add 2 tbsp. water, beat well with a wooden spoon or spatula.
Mix oil and soda, and mix into the batter, mixing very well till frothy. Heat the prepared vessel, covering with a fitting lid.
Steam and allow to cook for 6-7 minutes. When the dhokla gets springy to touch, sprinkle cumin,chilli powder and coriander.
Sprinkle a tbspful of water all over dhokla. Cover, simmer for 1 minute, Remove plate.
Cut into squares or diamond shapes with a greased knife. Serve hot with Green allpurpose or Coconut chutney.

4. Put the steamer on the gas and when the water in the steamer starts to boil, add the fruit salt into the batter and mix well.
5. Pour the batter into 3 greased thalis, put them in the steamer and steam for 8 to 10 minutes.
6. Serve hot with green chutney.
Tips Add the fruit salt into the batter just before you are ready to steam the dhoklas, or the dhoklas will not rise. Remember that the water in the steamer should be boiling when you put in the dhoklas to steam.

Ingredients 1 teacup moong dal with skin 2 teaspoons gram flour ( besan ) 2 green chillies 1 tablespoon fresh curds 2 teaspoons fruit salt a pinch asafoetida salt to taste For the topping 2 tablespoons finely chopped cabbage 2 tablespoons finely chopped carrots Method 1.
