Daliya Chilli Powder
The daliya chilli powder can be used to layer dosa’s or can be served with idly, or with steamed rice and dollop of ghee. Makes: around 1 1/2 Cups of Daliya Chilli Powder Ingredients: Dalia / 1 Cup Green Chillies 4 Long Garlic 2 Cloves 1/2 inch Piece Salt to Taste Talimpu: 1/4 tsp a Big Pinch 8 Oil 1 Tbsp + 1 tsp Method of preparation: Remove stems, wash and chop the green chiles into thick circles.
Peel and slice the garlic cloves. Wash and tear curry leaves into small pieces.
Heat oil in a pan, add chopped green chillies and fry till they change color and turn crisp. Remove the chillies onto a mixing bowl.
In the same pan with remaining oil, add ginger. Fry for a minute and remove the ginger onto a plate.
Now add a tsp of oil if necessary and add all talimpu ingredients. When cumin seeds change color, add sliced garlic cloves and fry briefly.
Remove the pan from heat and add to the above mixing bowl. Grind dalia into somewhat coarse powder along with few fried chillies, fried ginger and salt.
Remove the ground dalia powder into the mixing bowl containing the spices. Mix everything well and store tight in a jar and the powder stays fresh for few months.
The daliya chilli powder can be used to layer dosa’s or can be served with idly, or with steamed rice and dollop of ghee. Notes: Make sure not to over grind the dalia coconut powder.
Suggestions: Refrigerate the daliya powder for extended shelf life. Variations: You can adjust the amount of green chillies according to preference.

In a bowl marinate prawns with turmeric powder, red chilli powder and salt and leave undisturbed for 5 minutes. In a frying pan add oil, after it heats up add the crushed garlic pods and saute for just a few seconds.
Then immediately add the marinated prawns and fry for a minute. Add 1/4 cup of water and cook on a high flame.
When the water content reduces and masala thickens, remove from flame and serve. Now add green chillies, ginger, garlic and capsicum. Fry for 1-2 minutes.
Add, the soy sauce, chilli sauce, tomato sauce, chilli powder, food colour and saute for a few seconds. Now add the fried paneer and mix it well with Chinese salt, normal salt and pepper.
Serve hot with fried rice or noodles. Heat oil, first temper fennel seeds then add add curry leaves, green chillies let it splutter. Then add ginger garlic paste, allow it to brown slightly.
Now add onions, once it turns golden brown, add tomatoes when it turns mushy add turmeric, chilli and pepper powder. Add required salt and mix well.
Then add the eggs mix it to scramble well, once it turns nicely fried and blended with the masalas add the chopped parato and give a stir so that parotta is blended well with the egg and masalas. Garnish with coriander leaves and switch off.
